POTATO FRITTER
- Fritter
1 egg white
1 pack of Ideal Protein potato puree
1 egg
1 tsp. sea salt
1 tsp. black pepper
Dressing
1 tbsp. maple flavored syrup by Ideal Protein
1-2 tsp. cayenne pepper
Salad
½ c. kale, chopped
2 tsp. lime juice
1 tsp. sea salt
Mix IP potato puree, egg, sea salt and pepper. Add batter to a heated non-stick or lightly olive oil sprayed pan. Cook on medium-high for about 3 minutes on each side-until a rich brown. Mix dressing ingredients while the fritter is cooking. Also, dress kale with lime juice-save sea salt for later. Once fritter is plated, drizzle dressing over fritter lightly and top with the salad. Sprinkle with sea salt.
